Burnt Dinner and how to do it right.

I've lost my mind


   Baby brain is a thing that all pregnant women go through. We forget small things on the regular which in the end makes us frustrated and our partners get a great kick out of it. While I was pregnant with Babe #3, I caught myself putting my bagel in the bathroom sink instead of the toaster in the kitchen. Whiskey Tango Foxtrot, what is wrong with me?? Baby brain.
   Baby #3 will be 6 months old next week and things  have only sightly gotten better. Some days I feel as if I should not be left unsupervised, other days I'm Super Mom.

Burnt Dinner: Chicken and Rice Casserole. Don't leave it in the oven for a hour and 40 minutes because you use frozen chicken. It's going to be burnt and crispy. Also, don't forget to season your chicken.

     Pre-heat oven to 350 Degrees

Supplies Needed:

   Measuring cup
   13X9 baking dish
   Spoon (very high end, I know)
   Long grain white rice
   Powdered Chicken stock, or liquid.
  4 Chicken Quarters- Season these to your liking
 

    Rice Seasoning Mix (Totally optional) 

    1 tablespoon or 3 shakes of garlic seasoning (NOT garlic salt)
    1 pinch of cayenne seasoning for a kick
    pepper to taste


   We have a brood of children so, when we buy chicken, we buy chicken quarters. Chicken Quarters are more affordable, the kids get the drumsticks, and us big people get thighs or a whole dang quarter.

 Directions:

1. Measure out 2 cups Rice, dump into 13x9 baking pan.

2. Measure out 2.5 cups super hot water or liquid chicken stock.

   If you are using powdered chicken stock, dissolve your powder in your hot water. Mix it in your measuring cup. I prefer the concentrated powder because I can add more of it to my liquid for a richer flavor.
 
3. Pour your stock mixture over your rice, stir contents with your spoon.

4. Add your rice seasoning to your rice & stock and stir.

5. Season your chicken quarters. salt, pepper, whatever you like.

6. Place your chicken on your rice/stock mix, toss in oven, set timer to 1-1.5 hours.


After a hour and a half in the Oven, pull it out, mix the rice around, serve it up, and called dinner a success.

Tips & Hints:


Periodically check on your chicken, If it's starting to look a little dark or the skin looks crispy, go ahead and tent it with foil.

I tossed a half can of peas on top of my rice mixture before placing my chicken in the pan and it turned out great.

I opted for chicken stock instead of the typical cream of mushroom soup because I didn't have any on hand. I'm going through a phase where I absolutely do not want to go to the store. My Giant does the grocery shopping for us. Call me a hermit, I'm okay with that.

Urban Homesteading....What?



    I'm not too sure we know what we are doing but, we are doing it. We have our tiny garden started, the chicken coop is built, water barrels are up and thanks to the recent rain-- they are full. We are picking the chickens up in a couple days and farm fresh eggs will be in production after the hens get use to their move. More details to come later, I've got dinner burning!
